      Savatiano is the most-planted Greek variety, appearing all over the country. Most is found in Attica, where it is used to make much of the region's uninspiring, mass-production Retsina and other somewhat dull whites. But when yields are kept down Savatiano's true quality shines through. In the hands of a skilled winemaker, it can produce lovely rich, gastronomic white wine with a savoury, herbal edge, as well as some truly excellent modern Retsina.
